What's sucralose?
Sucralose is a zero-calorie sugar substitute artificial sweetener. In the European Union, it is also known under the E number (additive code) E955. Sucralose is approximately 600 times as sweet as sucrose (table sugar), twice as sweet as saccharin, and 3.3 times as sweet as aspartame. Unlike aspartame, it is stable under heat and over a broad range of pH conditions and can be used in baking or in products that require a longer shelf life. The commercial success of sucralose-based products stems from its favorable comparison to other low calorie sweeteners in terms of taste, stability, and safety.
Application sucralose
-Applied in food field, often used as additives, with distinct fragrance smell, menthol can promote digestion and increase
appetite;
-Applied in daily necessities field, menthol can be added into a large amount of oral cleaning products, such as dentifrices,
mouthwash and tooth powder;
-Applied in pharmaceutical field, because menthol has the function of inhibition and paralysis to sensory nerve endings, it can be used as counter irritant.




Manufacture Method

The preparation methods of sucralose include single ester method, enzyme chemical method and group migration method. The first two methods only protect a certain hydroxyl group, so the degree of substitution cannot be controlled during chlorination. The resulting product is a mixture, especially the monoester method may cause the decomposition of sucrose to produce fructose ester.

The group transfer method protects multiple hydroxyl groups at the beginning, so that the chlorination reaction tends to be
directional. A single product can be obtained without special separation technology, and the yield can reach 36%.
