Keratinase is a kind of protease which can degrade keratin specifically. Keratinase can be produced by many microorganisms and can degrade keratin specifically. It is used in feed, leather, food and other industries.
In addition to keratin, protease can hydrolyze various protein substrates, including soluble and insoluble proteins. Keratinase can degrade soluble proteins such as casein, gelatin and bovine serum albumin.
The optimum reaction pH of keratinase is from neutral to alkaline, usually between 7 and 10. The optimum pH of individual keratinase can reach about 12. Acidic keratinases are relatively few, mostly produced by some fungi, such as Bryophyta tenuifolia, whose optimal pH is 5.5, and Candida albicans is 4.0.
