This product is known as "Shiradashi". It is a white dashi that features the rich aroma and taste of dried bonito, kelp and shiitake mushrooms. Utilizing the salty and mellow taste and color of the ingredients, the dashi stock and soup are quickly finished.
Kitai Shoyu brews hand-crafted soy sauce with the inherited brewing tradition of using "Koji", which is an ingredient of traditional Japanese seasonings such as soy sauce or miso. Hand-picked whole soy beans, wheat, and sun-dried salt are used as ingredients together with natural spring water; these are all mixed in wooden barrels and left to mature and ferment for over two years. Furthermore, we never use any kind of chemical flavors or additives. Kitai Shoyu continues to faithfully devote ourselves to the traditional natural brewing process to produce and sell "pure unrefined soy sauce".
