InJapanese, "surimi" means ground meat. In China, it is called "yu jiang", meaning "puree fish". Today, the biggest surimi producers are the US, Japan and Thailand. Surimi is also produced in China, Vietnam and Malaysia.
How is surimi made?
- Lean meat from fish (cod or pollack) is first separated or chopped, then washed several times to remove unwanted flavors.
- As a result, the meat is finely chopped and ground into a fine mixture. Depending on the desired texture and taste of the surimi product, puree mixes are mixed with food additives such as flour , egg whites, salt , vegetable oils , sorbitol , sugar , soybean protein , spices and spices. flavor enhancers such as transglutaminaza and glutamate ( MSG ).
