Our Matcha is made from authentic Ujicha tea produced in Kyoto, with a high level of quality you can only expect from along-established tea manufacturer and seller in Kyoto. We use only tea leaves from the first harvest, which grow through autumn and winter and are the first to be picked after the New Year.
These tea leaves are amazingly fresh and of optimal quality with no agricultural chemicals.

Manufacturing Technique


“Covered tea garden” is a cultivation method in which the tea garden is covered with a light-shielding material (lawn cloth) while the shoots are growing, and it's grown by blocking light for a certain period (20 to 30 days).
By blocking the light, the tea gets a bright green color and a unique aroma, mellow umami and sweetness moreover theanine and *Umami ingredient grown in the roots reaches to the tea leaves.
In tea cultivated by basic tea gardens, theanine will reborn as catechins by photosynthesis. However theanine is accumulated as it is by blocking photosynthesis in “Covered tea garden” and you can enjoy the umami and sweetness of tea even more.

*Umami which means “essence of deliciousness” in Japanese.
It's delicate, complex and deep taste, one of the core in fifth tastes including sweet, sour, bitter, and salty.
