Bright orange nameko mushrooms are a popular Japanese mushroom variety with a mild, earthy flavor and an aroma similar to cashews.
Their caps display a distinctive glossy sheen due to a naturally occurring gelatin coating.

Also known as butterscotch mushrooms in the United States

Soft, silky texture (when rehydrated) and a sweet, nutty flavor

Cap ranges from 1 to 3 inches in diameter, while stems are 2 to 3 inches long

Suggested Uses :

Add to miso soup, a common practice in Japan

Diana and David Moore met at a luxury hotel in the late 1980s. She was a concierge and he was a food and beverage director. From quinoa fields in the Andes Mountains of Peru to red rice from the lush fields of Bhutan, we have traveled the world in search of the next remarkable ingredient - and the next great story.
Over the past 30 years, we have grown from a small team working out of an apartment to a workforce of over 300 in 475,000 square feet. Our three facilities house a new fine-mesh pulverizer and state-of-the-art sterilization equipment, making these unusual ingredients market-ready.
