> It is selected from the shoulder and neck meats of the calves carefully raised in the Molu Farm. These meats are removed from parts such as bones, cartilage, nerves and tendons and cooked in special double-walled roasting cauldrons. After the cooking process is completed, the meat is left to cool and the unique fibrous intestines are filled in such a way that there is no air left.
