This junmai ginjo is brewed from JAS certified organic rice milled to 60%, and is certified organic in Japan, Canada (which has equivalence in the USA and Taiwan), and the EU.
It is fermented in traditional wooden tanks, pressed, then bottled after low-temperature pasteurization.
