STARCH SODIUM OCTENYL SUCCINATE ( E code : 1450 )
Starch sodium octenyl succinate is a special form of chemically modified tapioca starch that accrues during a reaction of starch with octenyl succinic anhydride.
The finished product has a degree of substitution of 0.02. The sodium octenyl succinate starch and gum arabic of low viscosity were used as wall material respectively to microencapsulate oil.
The relative emulsion stability was analyzed. It was found that the viscosity of sodium octenyl succinate starch was lower than that of gum arabic.
The emulsion stability when sodium octenyl succinate starch was used as wall materials to microencapsulate oil was better than that when gum arabic was used as wall material.
The higher the degree of substitution in sodium octenyl succinate starch, the better was the emulsion stability.
Both microencapsulation efficiency and storing stability when sodium octenyl succinate starch was used as wall material was higher than that when gum arabic was used as wall material.
The storing stability of microencapsulated oil would be higher with the increase of the degree of substitution of sodium octenyl succinates starch.
The cookie and cracker:
The cookie and cracker often contain 15% oil. KSX-7643PG can emulsify the oil with water to make the taste more creamy. Film forming function can extend shelf lie. KSX-7643PG may replace BAKA*SNAK.
