・Product
”Yamazaru” (meaning wild monkey) is a dry sake with moderate acidity because it uses medium hard water flowing from Japan's largest karst plateau called "Akiyoshidai".

We also use sake rice from Yamaguchi prefecture. In particular, "Kokuryo Miyako" has high rice ears and takes time to cultivate, but it is a rice suitable for sake brewing along with "Yamada Nishiki".

Yamazaru is a sake with a strong taste that goes well with not only fish dishes such as sashimi but also meat dishes with a strong sauce.




・Sake brewery
Nagayama Sake Brewery, which has a history of 135 years, is brewing sake using stable quality rice in cooperation with local contract farmers under the theme of "living with agriculture".

Last year, he won eight awards including shochu and wine, and the president's son is doing his best as a young "Toji" who is expected.

① Junmai sake
Soft, rich in umami of rice, and sharp. You can enjoy "old-fashioned sake".






② Special Junmai Sake
The sharpness is outstanding while making the best use of the unique umami of "Kokuryo Miyako". A solid taste that is comparable to the sweet soy sauce of western Japan.






③ Junmai Ginjo
While insisting on the aroma reminiscent of fresh ripe melon and the umami of rice, it is a refreshing sake with good sharpness.






④ Junmai Ginjo Aged Sake
Aged for over a year. It has a sweet scent like maple and fruit, and has a soft and plump taste and a refreshing sharpness.






⑤ Daiginjo
Characterized by a faint scent of ginjo (fruit-like scent) and a richly expressive taste, it is ideal for sake during meals. The same raw sake as the exhibited sake that won each competition is used.






⑥ Yamahai Jikomi
Sake made with Yamahai (traditional method). There is a good balance between the taste of rice and the sharpness.
