After the cherries picked, processing must begin as quickly as possible to prevent fruit spoilage. Depending on the variety of coffee and local condition, coffee is processed in one of two ways:
The dry method: The freshly picked cherries are simply spread on the yard in the sun for several days until the moisture of the cherries drops to 13%.
The wet method: Removing the skin and pulp from the coffee beans after harvesting by several steps with machines, water and fermentation process. The beans after fermentation feel rough to the touch then rinsed by additional water, and are ready for drying.
