In 2015, Washoku (Japanese cuisine) has been registered at UNESCO and many of Japanese restaurants are opened all over the world due to good reputation of Japanese dishes.
The higher popularity of Japanese dishes naturally made the demands on Japanese traditional style cooking knives which is the most suitable tools to prepare Washoku dishes and it seems that more demands for Japanese traditional style cooking knives become higher in the future.
However, the true picture of the Knife Industry in Japan at present is that all the manufacturers are suffered from the old ages
of labourers and extreme shortage of young workers.

In order to keep this splendid technics of Japanese traditional style cooking knives for longer, such as for 10, 30, 50 years, we
considered what we should do and came to a conclusion that it is not enough to sell the products made by others only and made a decision to develop our own brand and started to manufacture

The knives of Minonokumi Yamahide Brand have not been made of any special steel or handle materials but they are made of just normal steel & material used in the past for long years due to the reason that they are simply the most suitable steel & materials for Washoku cooking.
But we made our products with most careful attention on traditional way of Forging, Grinding, Sharpening one by one by hand works with all of our heart.
