Milestones:

1897: Constitution of the Society of Oil Producers of Bordighera Riuniti and beginning of our history.
1960: Acquisition of Vincenzo Salvo, historical oil producer in lmperia, and start of our sales on the foreign
markets.
2002: Inauguration of the factory in Chiusavecchia (lmperia), with a covered surface area of around 5,000
square metres, where we package one million pieces annually.
2007: Complete automation of the filling department, with the acquisition of state-of-the-art automatic
machinery to guarantee the highest quality standards for the containers produced.
2012: Creation of our farm & cultivation activity, for a complete control of the Taggiasca olives being produced
and marketed.
2015:
Inauguration of the new oil mill built, applying the most stringent and innovative parameters, for the
customisation and food safety of our Extra Virgin.
2018: Installation of the new sorting and sizing line, dedicated to our fresh Taggiasca olives, in order to
guarantee absolute quality monitoring and homogeneity in the size of the olives.
2023: Inauguration of the innovative pitting plant, temperature-controlled and equipped with residual water
disposal, which returns a stone-free Taggiasca with an extremely compact pulp and insignificant residual
moisture.


ABOUT US - OLIO SALVO (VINCENZO SALVO SRL)

Our activity began in Bordighera on the West Coast of Liguria on 25 January 1897 and for over a century we have been stubbornly
working in the presence of this arid and precious terraced land, embanked by monumental dry-stone walls, continually updating the
way we produce and preserve our “liquid gold”, our affectionate name for extra virgin olive oil.

Traditional farming has given way to modern industrialised methods, like the shift from olives transported in sacks for pressing
to aerated containers, where the olives, laid out in thin layers, retain their fragrance.

Wooden barrels and straw wrapped demijohns have given way to elegant glass or tinplate containers, designed for the optimal
preservation of our extra virgin olive oil.
Stainless steel tanks and modern bottling equipment have improved our storage and packing times, thus helping us to guarantee the
highest quality of our olive oils over time. Our aim has always been to produce quality oil from raw materials and to better serve
tradition with the use of technological progress.

With these words, on 2 July 2020, the Chamber of Commerce, Industry, Crafts and Agriculture of the Ligurian Rivieras entered our
company in the Register of Historic Companies.

OLIVE GROVES

Our olive groves, with the Taggiasca variety monoculture (monocultivar), enjoy the mild climate of the West Ligurian Riviera and
its very high annual exposure to the sun. The land, extending over a system of strips, or terraces, is set in valleys arranged
much like an amphitheatre – with a natural protection from the Alpine climate and the semi-continental climate of the Po Valley –
a picture of a truly unique climatic environment, ideal for the cultivation of the Taggiasca olive.

THE OLIVE OIL MILL

In our mill, the typical stone millstones gently press the Taggiasca olives, through a centrifuge separation system that
guarantees an exclusively cold processing. The pressing service, which we also offer to our customers, offers the utmost care in

BOTTLING

The EVO (extra virgin olive) oil to be bottled is selected based on the olives pressed and the organoleptic characteristics
necessary to guarantee the exact correspondence of the extra with the label we put on our customised container.

EXTRA VIRGIN

Our extra virgin olive oil from Taggiasca olives is obtained from olive groves in the provinces of Imperia and Savona. The
Taggiasca olives are pressed in our oil mill and the resulting olive oil, also referred to as liquid gold, is bottled directly by
our company in the Chiusavecchia site.

CONTROLLED DNA

A spontaneous union of olive growers in western Liguria, particularly in the provinces of Imperia and Savona, has led to the
creation of the Salvataggiasca Committee (translatable to SavetheTaggiasca Committee), with the aim of promoting and preserving the Taggiasca olive.
The Taggiasca cultivar thrives in the terraces of western Liguria because of the microclimatic conditions that have made it unique and appreciated worldwide; it is in fact both rare and unique. The Comitato Salvataggiasca chose the DNA Certified brand because of its desire to protect the fruit of their work, to be able to pass it on to future generations.

We are based in West Liguria, perched on the Maritime Alps that drop into the Tirrenian Sea in the Northern Mediterranean, in Italy, not far from bordering France.
