VARGNANO - MONOCULTIVAR NOSTRANA
This very limited production is obtained exclusively from the cultivar Nostrana. The olives are still harvested green, which allows the cultivar to best express its characteristics. The oil has a pale green color, the nose expresses a remarkable aromatic intensity that recalls fresh vegetable notes with tomato leaf and artichoke, the palate emphasizes the aromatic breadth, closes an elegant spicy green olive.

Strictly raw, to enhance fish carpaccio, salads, vegetables and soups.

Company Profile




A wealthy man who owns land in the municipality of Varignana has been thinking, in recent years, of extracting oil from the
olives, which come from some old, deteriorated and poorly maintained trees. This oil, which I tasted, is clear, of excellent
taste, and far superior to those commonly sold. God would want the damaged olive tree cultivation to be restored, which with so much profit dressed and embellished our hills in other times".

Thus wrote Gioan Ignazio Molina in his "Memoirs of Natural History" in 1821, hoping for the return to Varignana of the noble cultivation of the olive tree. Studies and historical research have in fact revealed that in this land of Emilia, from Roman times until 1700, the olive tree was cultivated. A story interrupted due to the so-called Little Ice Age. 400 years later, Palazzo di Varignana has brought back the oldest varieties of olive trees to populate the hills, mending time and space to return to producing a very high quality extra virgin olive oil.

Starting from 2015, an ambitious agronomic project was launched which led to the redevelopment of the landscape by bringing large portions of uncultivated land back into business. Important works of drainage, reclamation, cleaning of ditches and regimentation of rainwater have reduced the hydrogeological instability in order to re-evaluate this area, making it the theatre for a new renaissance.
