Definition: Gur (jaggery) is a natural product of sugarcane. It is in a more unrefined form than sugar. It is a brown raw mass of sucrose which gets it colour because of other elements found in a concentration such as wood ash and bagasse. Jaggery is commonly made from two products, that are sugar cane and date palm tree. The process of making gur is easier and more convenient than sugar and has healthier than consuming refined sugar.

Description: Gur is mainly for human consumption, and is used in making sweet items. It is also consumed in raw form. Jaggery is also used in making alcoholic drinks and Ayurveda medicines. Jaggery is majorly used in the food processing industry for confectionery items, toffees, chocolates, chewing gums etc. Gur is popular in South East Asia, Latin America, North Africa and Caribbean Islands, though different products (sugar cane, date palm tree, sago palm, coconut palm) are used in making gur in these areas.
Specification:

The jaggery contains approximately 60-85% sucrose, 5-15% glucose and fructose. Along with 0.4% of protein, 0.1 g of fat and 0.6 to 1.0 g of minerals (8 mg of calcium, 4 mg of phosphorus, and 11.4 mg of iron). It is also found to contain traces of vitamins and amino acids. 100 g of jaggery gives 383 kcal of energy.
