GRAPPASYTEM
The Grappasystem method (not registered trademark) is a fermentation and storage system designed by Master Distiller Roberto Castagner to keep the pomace fresh up to 6 months from the arrival at the distillery and to ensure a controlled fermentation of white pomace. Red pomace, on the other hand, is perfectly preserved as it reaches the distillery already fermented.
Through the Grappasystem method, the marc is pressed inside tunnels of food plastic at a pressure between 90 and 100 atmospheres: the little air that remains inside will be saturated with carbon dioxide that develops during fermentation. During storage, pH will be corrected to prevent bacterial attacks and the development of mold. Selected yeasts are also added to white pomace to prevent uncontrolled fermentations. The food plastic tunnels have variable capacity, the longest ones (about 60m) can contain up to 20-20.5 tons of marc. Three different Grappasystems make possible the separation of marc according to the grape variety: each tunnel is numbered and records the winery and the batch.
BUCCIA PURA SYSTEM
During the 2017 grape harvest, an innovative technology was introduced that allows the pips and stalks to be separated from the white grape skins. The “Buccia Pura” ("Pure Skin”) system prepares the raw material for distillation without the woody parts, reducing the hint of tannin and achieving ground-breaking results in terms of smoothness and fragrance.
