The sea urchin of the Blue Marlin is caught in the seabed and feeds mainly on algae. The sea urchin inside has tasty coral-colored gonads called eggs which are extracted and eaten raw or as an appetizer or to season tasty pasta dishes. Blue Marlin sea urchin roe is packaged in 70g tin cans. The conservation of the product is guaranteed by the sterilization process.

It consists of salted and dried mullet or tuna roe. It is produced and well appreciated al over the Mediterranean basin, it could be that the Arabs brought it to Sardinia during their conquering voyages; the Bottarga has been developing an increasing gastronomical and commercial interest either by the local people or by the many tourists and visitors that find our Island a valid destination where to go on holiday.
