・Product
The water used for "Soga no Homare" is underground water from the Tanzawa Mountains, which is a little hard water. When hard water is used, the minerals activate the yeast and make it a powerful and dry liquor.

The characteristic of sake brewing is not the usual "three-stage brewing" in which moromi (material for sake) is brewed in three batches, but the traditional "four-stage brewing" in which it is divided into four batches. Furthermore, by using "glutinous rice", which is not normally used for the fourth preparation, the quality of sake is rich and agricultural.




・Sake brewery
Ishii Brewery, founded in 1870, brews in Soga, which is surrounded by the beautiful mountains of the Tanzawa Mountains and the Hakone Mountain Range in the western part of Kanagawa Prefecture, which is blessed with abundant water and greenery.

There is "Soga Bairin" (plum forest) nearby, and many tourists visit every year when the plum blossoms are in full bloom and the new sake is ready.

「The scent of a single plum and the taste of sake」  a phrase that an old traveler read about the peaceful atmosphere of tilting a sake cup around February when the plum blossoms bloom.
