FRESH MONGTHONG DURIAN
Durian fruits are cleaned and soaked into clorine solution (100-150 ppm) for 3 - 5 minutes. All tools (knives, gloves) are also sterilized, and durian processing is conducted in clean and sterilized rooms
Fresh durian: the fruit is kept in whole and packed into specific carton boxes (as per customer's requirements).
Frozen durian: the flesh is separated from the fruits and packed into plastic trays (wrapped by elastic wrappings) or
polypropylene bags before freezing treatment.
Ripe durians are classified by size and variety. The storage area has an air humidity of 85-90%, a minimum of 10% oxygen and a maximum of 5% carbon dioxide for lower ripening.
Durian freezing technology: Using IQF (Individual Quickly Freezing) technology at -60°C.
After preliminary processing, durian flesh is stored at -18°C to keep the high quality.
