Shochu brewery is very prosperous in southern Kyushu, Japan.

We add rice fermented moromi(main fermenting mash or unrefined sake) which is obtained during the distillation process of Shochu, and use our original unique technology.

The "rice fermented moromi" we use is provieded by our local shochu breweries in Miyazaki prefecture. We use "Aya's famous water" which is a bounty from Japan's best evergreen forest area.

Since we use "rice fermented moromi", its amino acids and organic acids give umami flavor and enhance the taste of dishes. We use natural salt "Simamausu" which is fermented in a flat jar.
