What makes our blanched almond butter keto-friendly? It contains only one gram of carbohydrate per serving- excellent for both almond butter lovers and those adhering to a low glycemic index diet. Blanching almonds involves removing the exterior of the almond leaving behind the surprisingly sweet nut interior, and its lighter texture and color. The almonds are then milled in a double grind process, making the butter creamier than typical almond butter.
This almond butter’s composition makes for an incredibly versatile ingredient. Blanched almond butter’s sauce-like texture enables it to be easily digestible and lovely to use in your favorite recipes such as almond milk, smoothies, soup bases, stir-fries, salad dressings, and veggie or fruit dips. About Us
About Our Plant-Based Peanut Butter Company
Founders
Jeremy Thaler and Constance Potter met while establishing Mifflin Street Co-op in Madison, Wisconsin. They shared a common belief in the importance of herbal supplements, worker-owned cooperatives, organic and sustainable farming and the power of community. Upon leaving Madison and moving to Rochester, New York, they established a worker cooperative distribution called Clear Eye Distribution, and a whole-grain bakery that also produced granola using a barrel roaster.
A chance question from a friend, “You have a barrel roaster; why don’t you use it to make peanut butter?” led Jeremy to the peanut butter business. In 1976, Once Again Nut Butter was born. When Jeremy and Connie left Rochester for a more rural area, they moved the company into their 800-square foot basement and manufactured peanut butter there until they purchased the current facility in 1981.

Any thoughts of producing any raw products?
No, there are way too many risks to our consumers that we are not willing to take while producing raw products. An example: Salmonella.Are your nut and seed butters roasted with oils?
We do not use oils while roasting our nut and seed butters; they are all dry roasted.
Do your suppliers use any pesticides, sprays or solutions of any kind on your raw nuts and seeds?
We buy our nuts and seeds from shellers who buy them from hundreds of growers. Therefore if you are concerned about pesticides, we recommend that you buy organic butters.
What does it mean, traces of other nuts?In the last 20 years or so, the incidence of food allergies has increased significantly. While we do a really good job of making sure our products are separated, there is still a small risk of cross-contamination; therefore, we recommend that any person with a health-threatening allergy avoid our nut butter products.
