The special small barrels are built with different woods and with a graduated and average capacity from 200 kg of fresh grapes about 100 kg of cooked must is obtained which, at the end of the decanting operations, are reduced to a few liters of finished vinegar.
The barrels used for the slow acidification derived from natural fermentation and the progressive concentration of the product are traditionally kept in the attics of houses, where the cold in winter is intense and the heat in summer is very strong. The differentiation of woods between one cask and another gives a precious bouquet of aromas.

Balsamic vinegar is not just a simple ingredient for dressing salads. It is exceptional on meat, fish and shellfish, on
vegetables, but also on aged cheeses accompanied by a pear. And in the end it goes very well with fruit, sweets and even ice cream.
