WINE COFFEE : COFFEE WITH A TASTE OF WINE
Wine coffee is the result of natural fermentation and the process is certainly not arbitrary. Coffee that grows at an altitude of 1500 meters has a different harvest time than coffee that grows lower.
When harvesting, the number of fruit is not as much as other coffees. Usually the coffee beans are first separated from the skin and then dried in the sun. But for this type of variant, the coffee is dried together with the thicker skin for about 60 days, some even up to 145 days, until it is completely dry.
The sap contained in the coffee skin is absorbed into the coffee beans during the fermentation process.
Arabica coffee, which does have a higher acid level, becomes more acidic due to the absorption of the sap so that the resulting coffee tastes similar to wine, the product of grape fermentation.
