Ever since its founding in Meiji 6 (1873), Zao has been dedicated to making sake of the highest quality, brewing only one time per year from November to March. They make their sake using rice that's well-suited for sake brewing that has been locally-grown by contracted farmers and the natural blessings of the ground water and winter winds on Mount Zao. They also produce new types of sake, such as the rosé-colored low-alcohol sake made using chromogenic yeast and sparkling low-alcohol sake.
Received the gold award in the premium daiginjo division at The Fine Sake Awards Japan 2022. A junmai daiginjo sake made by a young chief brewer. Made with a gorgeous, rich smell, which is then blown away. This extra step produces a rounded, rich flavor. The balance of the rich body and smooth fragrance gives it a flavor that goes well with food and is easy to keep drinking. An old-fashioned junmai daiginjo.
