Cassia and cinnamon is a spice created from the inner bark of the Cinnamomum plants. Cassia is botanically known as Cinnamomum aromaticum or Cinnamomum cassia. Cassia has a sweet, aromatic, and pungent flavor. Vihaba's cassia is grown in Yen Bai - is the capital of cassia in Vietnam.

Processing
Harvesting
There are two seasons for peeling cassia: spring and autumn. Harvesting of cassia bark is undertaken immediately after each of the rainy season by skilled workers in the early mornings.
Drying
After being harvested, the outer skin layer is removed. Then, cassia bark is dried in the sun to dry it out and then dried in a stove at a temperature of 70- 75°C. The cassia bark is dried and rolled up naturally..
Cutting
After drying, cassia will be cut to the desired size of different types. It is also ground into cassia powder. Cassia is packed in boxes or wrapped carefully so as not to break or reduce the quality of cassia.
