HISTORY
Stefania Calugi started selling fresh truffles in 1987, selecting the product from trusted truffles hunters network identified by her father Renato: at the beginning customers were Tuscan restaurants and shops. Stefania inaugurated the first workshop in 1988/1989 in Castelfiorentino (FI), the municipality where the company is based and in which Stefania was born and lives: in fact the decision to support preserved products sales had determined the need of a new location; during this period, together with the first truffle preserved products production (including creams, in brine or natural, flavored oil and butter) it also began the artichokes in oil and other vegetables production.

STEFANIA CALUGI moved to the current plant in Via Cerbioni, Castelfiorentino (FI) in 1992, occupying a 400 square meter structure equipped for fresh truffles both preservation and processing: here the quantities were increased in the following years and “sliced truffle”, one of best-seller product, had been launched.

Since 2010 the company is led by Stefania Calugi together with Jurij Marchetti: under this duo management began the consolidation in domestic market and expansion abroad together with the range increase through the insertion of preserved products such as jams, jellies and bruschette. The acquisition of 30 hectares certified organic truffle fields -used both for truffle supply and organization of truffle hunting tours for tourists and lovers- was carried out from 2013 to 2016, and further acquisitions are planned: in the meantime (2015).

Stefania decided that all products would become gluten free. The expansion of the company building through the acquisition of additional spaces (more than the double of the existing area) was completed in 2016, when the company has moved from 400 meters to the current size that exceeds 1,000 square meters: at the same time the complete renovation and modernization of the laboratory, warehouse, offices and showroom took place between 2016 and the first months of 2017. The biggest news of the recent past has been "La Strada del Tartufo” (Truffle Street) inauguration on November 2017: this is a cognitive path built inside the company building assembled by a combination of plants, objects and a series of illustrations that will allow visitors to know the whole truffle world.


METHODS
Everything starts from raw materials, which are subjected to a rigorous selection focused especially on freshness and flavors
evaluation: even today Stefania and Jurij personally choose the best truffles.

The working methods are artisan and every processing respects the original ingredients taste: in addition the recipes concepet and
revision -often inspired by local culture and history- are achieved with deep passion and great creative push.

Our ethics is based on work and respect principles: we are an expanding big family!

We consider quality as a constant guiding principle that must permeate all aspects of the company: furthermore, to guaranteeing
the raw materials, ingredients and working methods standards are connected to the final result responsibility that must be tasty
and harmonious.

2) CHEF: it is specifically created to support the needs of professionals facilitating the exaltation of their creativity while ensuring maximum practicality.

3) BIO: organic certificated products with which it is possible to compose an entire menu; "Vegan" references have recently been added inside.
