Chitin is an inexhaustible biological resource. It is safe and non-toxic, and will not pollute the environment. Chitin takes off some acetyl groups to form a macromolecular polymer of glucosamine: chitosan, and then uses enzymatic hydrolysis and ultrasonic method to change chitosan into chitosan oligosaccharide with smaller molecular weight.
