Vital wheat gluten is a natural vegetable protein derived from wheat or wheat flour with the starch removed. It consists of relatively high gluten content and plays as functional protein due to its good water absorption capacity and viscoelasticity of formed dough when hydrated.

 

In the food industry, as a pure natural additive, added to the weak flour, gluten powder can be used for hair water gluten, baking bran, ham sausage, vegetarian chicken, ancient meat, luncheon meat, canned food and so on. In the feed industry, gluten can replace part of -converted starch as a binder, and it can also replace part of fish meal as a protein source, and make the composition of amino acid more reasonable.

 

When used in puffed feed, it has good effect on improving the appearance of feed products. Gluten is also an effective way to increase the amount of plant protein in food.

 

 Application OF Vital Wheat Gluten :

  • Vital Wheat gluten is a meat-like, vegetarian food product, sometimes called seitan, mock duck, gluten meat, or wheat meat.
  • Vital Wheat gluten is made from the gluten, or protein portion, of wheat, and used as a meat substitute, often to imitate the flavor and texture of duck, but also as a substitute for other poultry, pork, beef, and even seafood.
  • Wheat gluten is produced by rinsing wheat flour dough in water until the starch separates from the gluten and washes away. 
  • Wheat gluten(Vital wheat gluten) could be used as natural additive to be added into flour to produce wheat powder for bread, needle, dumpling and fine dried noodles.
