Deba Hocho are broad and thick-bladed Japanese kitchen knives suitable for cutting hard foods and dressing fish. So you can slice fish into three pieces, leaving little meat on the spine. Recently this type is used not only to cut fish bu also to cut a chunk of meat because Deba is hard and tough enough to do that.

This series is made of Shirogami Steel which has been widely loved by professional chefs in Japan due to its sharp edge & easy resharpening.
Careful grinding & edging on the blade done by Sakai craftemen are far superior than hochoes from other companies and users can notice big difference between this and others by using both of those actually. The handle is made of Ho Wood in the chestnut shape with ferrule made of water buffalo horn.
This series is ranked in the middle class among Minonokuni Yamahide Hochoes.

That traditional manufacturing method employed by craftsmen is the essence of Japanese knives.

Minonokuni Yamahide knives are made for all the chefs who serve Japanese cuisine around the world. In 2019, we remodeled our store "World Knife Showroom," one of the largest of its kind, where more than 3,000 knives are always on our shelves.
