L-Methionine
L-methionine, also known as L-methionine, is the levorotatory form of methionine, the chemical formula is C5H11NO2S, and the chemical properties are colorless or white shiny flake crystals or white crystalline powder, with a special smell and slightly bitter taste. The melting point is 280～281℃. It is unstable to strong acid and can cause demethylation. Dissolved in water (5.6g/100mL, 30℃), warm dilute ethanol, alkaline solution or dilute inorganic acid. Hardly soluble in ethanol, almost insoluble in ether.
