Known as Jin Xuan in its native Taiwan, Taiwan Milk Oolong is a delicacy that is prized by tea lovers from all over the world for its sweet, creamy taste. This is a special hand processed tea that comes from Jin Xuan Mountain in Taiwan. Soft, subtle and accented with hints of vegetal flavour, this silky smooth Milk Oolong is loved for its refreshing sweet and milky aroma.

More importantly, this particular Milk Oolong is special and unique in that its milky aroma and flavor are entirely natural, with no added flavoring like in some other teas. Special growing region and production process are what give this tea its natural creaminess, milk flavor and silky texture.
The first three infusions of this tea will start to bring out a slightly milky scent, which gradually fades away in later cups. While steeping, the loosely-balled leaves unfurl to yield a highly aromatic, smooth, mellow infusion, light-bodied with sweet cream and floral notes. The creaminess is a characteristic of the leaves’ variety, where they are grown, and the processing methods; again, there are no flavors added to this tea.

Fresh From Origin
The Ali Shan Milky Oolong(aka Chin Hsuan Oolong Tea, Nai Xiang Oolong Tea, or Jin Xuan Oolong tea) is native to Taiwan. Taiwan, named by the Dutch traders as “Formosa”, meaning “beautiful island”, remains as the only region in the world that produces the tea. The special “Jinxuan” Oolong growing in Ali Shan (Ali Mountain) comes with a unique natural milk flavor, due to the soil condition and production method. This scent has been enhanced with adding additional milk flavor during the frying process.




Process:
Milk oolong undergoes numerous processes that are each carefully handled to achieve its incredible taste. Firstly, the leaves are hand-picked by farmers. Secondly, they are spread on the tarpaulin to facilitate withering. Each leaf is given special attention and is heated equally. When they attain the required consistency, they are then fermented. In the fermentation stage, the leaves are enhanced with their captivating aroma, are carefully arranged in a layer and are left in a cool room through the night. The leaves obtain a special red color at the edges but they remain green in their middle part.
The fourth stage is oxidation, where the leaves are intensely fried at varying temperatures. Frying is important because it removes moisture from the leaves and to mix the resulting material with hot air so that it can have the required consistency. The next stage is twisting, where the leaves are put into a machine designed to shape them into small balls. Afterward, the leaves are sorted to remove any unwanted components and tea leaves with cuttings and finally, they are fried again under a regulated temperature in preparation for storage.








History:
Oolong tea was first developed in the early 1700s in Fujian, China. As a cross between non-fermented green teas and fully-fermented black teas, it combines the best of both in a single tea - and as a result quickly became popular all throughout eastern China and Taiwan. Nowadays, Anxi is the largest producing area of oolong tea, with its representative type of tia guan yin oolong tea.





Speciality:
Milk Oolong is a relatively new cultivar in the delicious world of Oolong teas and is prized for its inherent cream and butter notes. Lower quality versions have these notes enhanced through aromatization but the finest, true Milk Oolongs offer lightly roasted, rolled leaves that yield a light-bodied cup with sweet buttery texture and delicate floral aroma. The first three infusion of this tea will have slight milky scent, whereas this scent will gradually reduce for the next cups.


Fresh From Origin
Nope, there’s no milk in this tea, not in the soil and not in the leaf. Not a drop of dairy anywhere. But, oh, the milky sweetness in the cup will enchant you forever. From a 1980s cultivar of high-mountain Taiwanese teas, Milk Oolong is lightly roasted and its leaves rolled to preserve its intense flavor so that its liquor will be full bodied with an intoxicating floral aroma and buttery texture. Use a dedicated Yixing teapot for this tea to capture all its golden goodness. No wonder the Chinese call this Jin Xuan or Golden Lily.
