At the vineyard located just 1km from the Sea of Japan, the winds blow inland in the morning and out to sea in the evening, reducing the humidity, a major enemy of grapes.
The unique characteristics of this sandy soil are rare even from a global perspective, and to make the most of them, we have experimented with a variety of cultivation techniques including intentionally growing grass and weeds for a “living mulch,” reducing pesticide use, and suppressing diseases through the use of probiotics.
■Fermentation
The sands and winds produce grapes which feature a rich aroma and delicate flavor.We make the most of the features during the fermentation process to create flavors which reflect the individual character of the variety and the year.
Rather than create the world’s finest wines, I want to create unique wines which express the terroir of this region. After all, that is the true joy of wine.
