Its particularly tapered and square shape makes it one of the largest and heaviest cuts of beef together with the rump.
After eliminating every fat part present on the surface of the product, it is stuffed into the net and cooked at low temperature for no more than 4 hours. It undergoes heat reduction and division in half, followed by vacuum packaging and storage in refrigerated cells.
It finds the same use as the rump, with the particularity that however distinguishes it: in fact, in addition to the shape, the rump is crossed laterally by a nerve, often imperceptible when tasted. This means that its placement moves on quick dishes and sandwiches or wraps, but it is also excellent for simple sliced.
