Vitamin B2, also known as riboflavin, is slightly soluble in water and stable when heated in neutral or acidic solutions. When it is lacking, it will affect the body's biological oxidation and cause metabolic disorders. Without riboflavin, other B vitamins, especially niacin (vitamin B3) and pyridoxine (vitamin B6), cannot function, and thus cannot maintain the vitality of the body.
Vitamin B2 is mainly used as a coenzyme to promote metabolism. Riboflavin combines with phosphoric acid and protein molecules to form flavinase (dehydrogenase), which is important in mediating the transfer of hydrogen to sugar, fat and amino acid metabolism.
