Wine-making process | The grapes are harvested, destemmed and softly pressed and undergo a pre-fermentative maceration at 12-14°C to extract the characteristic aromas; fermentation and maceration last 15/20 days at a controlled temperature of 25/27°C, at the end of which alcoholic and malolactic fermentation is completed. After a further soft pressing, the wine is left to age for 4-6 months in steel tanks. |
