ADSP(acetate distarch phosphate) is a high grade starch further modified on the basis of acetate starch that’s crosslinking by sodium trimetaphosphate. Comparing to common starch, its solubility, swelling power and transparency are obviously improved like acetylated starch while aging tendency was significantly reduced and heat resistance is enhanced. It can form transparent gel and has well freezing stability, mechanical stability and acid resistance as well. ADSP is widely used in deep-proccessed meat products such sausage and ham. Since it also has low gelling temperature and excellent binding power, it is widely used in frozen noodle, dumpling and other flour products as well.
