Raw milk --pasteurization 72-75℃-- cooling to 37-38℃ pouring into cheese curd tank -- adding cheese starter STA IDC 604-- standing for 20-30min and adding Clerici calf rentase presoluble in sterile water -- curding for 30-35min-- start "cutting" medium speed cutting around 5min-- start "stirring", medium and low speed stirring around 10-15min-- unload the clots and whey from the unloading port below to the cheese truck -- acidize to 2.5-3.5h to about pH5.2, discharge the whey, and the clots can be put into the cheese stretching molding machine for the next operation.
