Overview
Glutamine transaminase, also known as transglutaminase (TG for short), is widely present in humans, advanced animals, plants and microorganisms, and can catalyze the cross-linking between or within protein molecules, as well as the connection between proteins and amino acids, and the hydrolysis of glutamine residues in protein molecules, it’s a healthy, efficient and safe food additives. Our TG enzyme is fermented by Streptococcus mobara. It has significant effects on protein foaming, emulsification stability, thermal stability, water retention and gelling ability, thereby improving the foods’ nutritional value, flavor , taste , texture, appearance, etc.

TG enzymes are widely used in sausage and meatball, soy, yogurt and cheese, pasta, minced meat, and etc.
Usuage
The usage of TG enzymes depends on the formula and production process of the food, please confirm it through experiments before use. For those food company applications, we recommend use the BTG-600 (usuage:200-600ppm) , and professional food additive compound company applications,we recommend the high enzyme activity product BTG-H2000(usuage：50-200ppm).
