Nisin, also known as nisin, is a peptide substance produced by Streptococcus lactis, which consists of 34 amino acid residues with a molecular weight of 3500 da. Because Streptococcus lactis can inhibit most Gram-positive bacteria and have strong inhibitory effect on spores of Bacillus, it is widely used as food preservative in food industry. Physiological pH conditions and α— Trypsin is a kind of natural food preservative with high efficiency, non-toxic, safe and no side effects, which will not change the normal bacteria group in human intestine and produce resistance problems such as other antibiotics, nor cross resistance with other antibiotics.
