1. Oxygen absorbers do not create a complete vacuum.
Oxygen absorbers only absorb O2, which is about 21% of air, so 1/5 of the air volume will be gone but 4/5 of the air remains no matter how many oxygen absorbers are used.


2. Oxygen absorber packets getting warm indicates they're working.
The oxygen absorber is made of iron powder, it will generate heat when reacting with O2 in the air, and the heat won't cause any danger. Just seal the package immediately and tightly when storing, after the O2 inside the package all had been removed, the oxygen absorbers will stop getting warm until exposed to new air.


3. Condensation is a physical phenomenon when using it.
Moisture exists in the air, although we can't see it. When oxygen absorbers react with O2, they will get warm, which will cause a temperature difference between the inside and outside of the jar, so condensation occurs. After all the O2 inside the jar has been removed, with no new reactions, the moisture will back to gas status.

2. Why Cook Sous Vide?
Cooking sous vide is easier than its fancy name might suggest. You simply seal the ingredients in a plastic bag (you can also use a canning jar) and place them in a water bath, a combi oven, or any other cooker that can set and hold a target temperature to within a degree or two. When the food reaches your target temperature or time, you take it out, give it a quick sear or other finish, and serve it.
