The process in general is the one that is carried out in the plant for our products with similar characteristics, taking care that the flavor of Hacienda de Lobos tequila is different to the industrialized tequilas, but with the quality that distinguishes us in all our products.
The agave plant was verified by the CRT (Chamber for Tequila’s Regulation) within the designation of origin, the cooking is done in automatic ovens until total hydrolysis of the present polysaccharides (agavina), the formulation of musts for fermentation was based on the ART content (total reducing sugars ) present in the agave.
The yeast that was used is a specific strain for this type of must, the fermentation times were 4 days. It is important to mention that the quality control laboratory follows all the stages of the process. The white tequila obtained complies perfectly with the current official standard: NOM 006 SCFI 2012.
