Walnut sausage is one of our traditional foods obtained by dipping and drying nuts such as walnuts, hazelnuts, pistachios or
almonds, which are strung on strings into the jelly prepared by boiling fresh grape juice or molasses with starch.
When evaluated in terms of nutritional composition, one of our traditional foods, soudjouk with walnuts, is a food rich in energy
and nutrients.
It is an energy-giving food with high nutritional value due to the protein, fat (especially rich in unsaturated fatty acids) and
antioxidant-rich vitamin E, minerals and other vitamins, and minerals and vitamins in grape juice and molasses due to the oil
seeds it contains.

Making the Walnut Sausage:
Walnut sausage is produced in our country with different names such as maraş sausage, kome, dip and sugar sausage. Walnuts strung
on strings are prepared either by dipping into the prepared jelly of grape juice boiled with starch, or by dipping into the
prepared jelly of molasses boiled with starch.
Composition of walnut sausage:
Oilseeds such as hazelnuts and walnuts are rich in B group vitamins, minerals, oil and protein. Despite their high fat content,
they do not contain cholesterol because they are of vegetable origin. Hazelnut is rich in monounsaturated fatty acids, walnuts are
rich in omega-3 fatty acids along with monounsaturated fatty acids.
Oilseeds such as walnuts and hazelnuts contain unsaturated fatty acids and vitamin E, thus reducing the risk of coronary heart
disease and cancer. In addition, the protein it contains is an important source of vegetable protein. Walnuts are very rich in
nutritional value. It gives 651Kcal energy. It contains calcium, phosphorus, iron, sodium, potassium, magnesium, thiamine, niacin
and ascorbic acid.
Walnuts, grape juice and molasses contain many minerals required for the body's normal metabolic processes. Walnuts, grape juice
and molasses are sources of calcium, which has an important role in the construction and development of bones and teeth, the
muscle and nervous system and blood coagulation. Some of the calcium requirement can be met by consuming walnut sausage.
