Food Enzyme Amylopectase Pullulanase for Food Industry
Introduction
Pullulanase, an important debranching enzyme, has been widely utilised to hydrolyse the α-1,6 glucosidic linkages in starch, amylopectin, pullulan, and related oligosaccharides, which enables a complete and efficient conversion of the branched polysaccharides into small fermentable sugars during saccharification process.
Collaborating with other enzymes (glucoamylase, fungal Alpha-amylase),pullulanase can speed up the reaction and improve the content of maltose.It is widely used in production of beer, starch sugar, monosodium glutamate,alcohol and animal feed industry etc.

1.Applicable range of pH value: 4.0-6.5
The optimum pH is 4.5
2.Temperature range: 40-65℃, the most suitable temperature is about 60℃
Pullulanase has better stability when it is lower than 70°C, with a residual activity above 90%. When the temperature is higher than 70°C, the enzyme activity begins to decline rapidly.
Recommended Dosage of Pullulanase
In manufacture of glucose: The recommended dosage is 0.7-1.2L with 1000U/g per ton of dry starch . Pullulanse and glucoamylase together use in saccharification step. The usage of pullulanse can improve the yield of glucose by reducing the content of amylopectin, and can reduce the usage of glucoamylase.
In manufacture of maltose: The recommended dosage is 2-3L with 1000U/g per ton of dry starch . Pullulanase and Fungal Alpha-Amylase can together use in saccharification step. The usage of Pullulanse can improve the yield of maltose, and can produce maltose syrup with content of 70% maltose.
In manufacture of beer: The recommended dosage is 0.8-1.6L with 1000U/g per ton of total raw materials. Pullulanase can reduce the content of amylopectin to produce dry beer.
In manufacture of feed:The recommended dosage is 150-200g/t with 2000 U/g in complete feed.
