Acetylated starch is a kind of acidified starch prepared by treating starch with acetic acid anhydride. Unlike dextrin made by heating(water hydrolyzing) or strong acids, acetylated starch is modified more lightly that’s some starch structures becoming macromolecular hydrophilic groups, but not broken. It is more stable at high temperatures and low pH while still owns starch’s properties--however its gelatinization temperature is also lower as well as peak and heat viscosity is higher, and long-term viscosity is stabler. Its paste is more transparent, heat-, acid- and shear force resistant. It is of great elasticity, preferable film-forming ability, stable freezing and thawing property, and well storage. Food grade acetylated starch is widely used in treated food such as instant noodles, frozen foods, ham, sausage, fish ball and so on.
