Arabic Gum is derived from the exudate coagulate collected from the Arabian tree trunk of Acacia.The lighter the color, the better the quality, fresh appearance smooth, transparent inside, odorless, tasteless, easily soluble in water, can be dissolved in a large number of hot and cold water, the formation of clear and sticky thick liquid.
Its application in food depends on its protection and stabilization of colloid, its viscosity and thickening, its low digestibility in low calorific value food formulations, and its use in confectionery production to prevent recrystallization and thickening of confectionery.

Function of Arabic Gum
1. Arabic Gum can be strongly adsorbed on the oil-water interface, resulting in a special emulsification stabilization effect, and is widely used as an emulsification stabilizer in emulsified essences; 2. The addition of Arabic Gum in the production of soft drink concentrates stabilizes flavors and essential oils;
3. In carbonated beverages such as cola, Arabic Gum is used to emulsify and disperse essential oils and oil-soluble pigments, so as to avoid the pigment circle at the bottleneck caused by the floating of essential oils and pigments during storage;
4. Arabic Gum can hinder the formation of sugar crystals and is used in candy As an anti-crystallizing agent, it can prevent crystal precipitation, and can also effectively emulsify the milk fat in toffee to avoid overflow;
5. Arabic Gum is also used as a clouding agent for beverages together with vegetable oils and resins to increase the variety of beverage appearance.
