from mature females Siberian sturgeon aged 10 years or more. Currently widely farmed in France, Germany, China, etc.
The species normally matures in the 7th- 8th years, weighs between 7 and 15 kg and its life expectancy is about 20 years. The eggs are dark in color ranging from brown, to sparkling gray or black.
