5、Character: It is anhydrous or contains 1.5 conbined water molecular. Anhydrous form occurs as white, granular powder andhydrated form occurs as white, translucent crystal or granule. It’s odorless and smells alkali. I air, it’s very deliquescent.
It’s freely soluble in water and aqueous solution is alkaline. It’s insoluble in ethanol or ether.
6、Usage: It is used as pH regulator, nutrient, processing aid and spice. When added into noodle and wonton processing properly, it could endow the product with unique flavor, color and resilience.
