Sodium citrate:
Sodium citrate is used in cool drinks to reduce acidity and improve taste.The addition of this product to brewing can promote saccharification, the amount of about 0.3%.Sodium citrate can be used as emulsifier and stabilizer in the manufacture of sorbetes and ice cream at the dosage of 0.2%~0.3%.It can also be used as an anti-rancidity agent for dairy products, a viscosity enhancer for processed cheese and fish products, and a sweet correcting agent for food.
