The ideal ally for professional kitchens and for the producion of the burrata cheese.
"La Panna di Pa'", thanks to the innovative Pascal production process (covered by a national and European patent), is characterised by its excellent yield (100% overrun) and stability over time; it is processed respecting the natural characteristics of the product, without the addition of additives of any kind.
It can be frozen.
Raw materials:
The high quality of all Pascal products is guaranteed, first and foremost, by the choice of excellent raw materials from the Piedmont region, in line with the company's decision to privilege the short supply chain in sourcing raw materials. The short supply chain, in fact, on the one hand avoids the decay of the raw material, (as happens during medium/long transport), on the other hand it allows the time elapsing from milking the milk to processing to be extremely reduced, thus ensuring an incomparable standard of freshness.
Variants:
Different fat titrations are available: Panna di Pa' at 38% and 35%, perfect for pastry preparations.
Panna di Pa' at 26% and 23%, is a cooking cream designed for catering professionals. The 21% titrated cream is also intended for the food industry, suitable for gastronomic preparations, produced in specific preparations, for the production of burrata and cheese products.
Panna di Pa' is also produced titrated at 17% fat. Pascal Srl is available to produce different preparations based on specific customer requests.

Production is based on an innovative production process, covered by a European patent, which makes it possible to obtain a final product whose organoleptic qualities are preserved because they are not altered by the thermal shocks typical of normal UHT plants.
The combination of the careful choice of fresh, top quality ingredients and the production process that delicately handles the raw material has allowed Pascal s.r.l. to develop and propose highly versatile long-life UHT products, capable of withstanding uses and transformations with high added value.
The high quality of the raw materials, all coming from the Italian short supply chain and mainly from the Piedmont region, are carefully selected. The choice of fresh local milk, coming from within a 40 km radius of the production plant, guarantees its unparalleled freshness at the time of processing.

We are based in Trofarello, Italy. As of 2014, we sell to the domestic market (80.00%), to North America (6%), Middle East (5%), Africa (5%) and Europe (4%). A total of 15 people work with us in our factory.
