Citric acid anhydrous is a natural component and intermediate product of physiological metabolism in animals and plants, and is also one of the most widely used organic acids in food, chemical and other fields. It is a colorless, transparent or semi transparent crystal, or a granular or particulate powder, odorless, and although it has a strong sour taste, it is pleasant with a slight aftertaste. Gradually weathered in warm air, slightly deliquescent in humid air. Anhydrous citric acid is called the first edible acidity agent, and it is allowed to use as Acidity regulator for food according to GB2760-1996 in China. It is widely used in the food industry as an acid flavoring agent, solvent enhancer, buffer, antioxidant, deodorizer, chelating agent, etc.

Product Application
1. According to domestic and international statistics, the consumption of citric acid in the beverage industry accounts for 75% to 80% of the total citric acid production. Citric acid is one of the natural ingredients in fruit juice, which not only gives fruit flavor but also has functions such as solubilization, buffering, and oxidation resistance.
2. The function of citric acid in jam and jelly is similar to that in beverages, mainly regulating the pH of the product and giving it a sour taste. The pH must be adjusted to a very narrow range that is most suitable for pectin condensation. According to the different types of pectin used, the pH can be limited between 3.0 and 3.4. In the production of jam, it can improve the flavor and prevent the defects of sucrose crystallization and sand formation.
3. Adding citric acid to candy can increase its acidity and prevent oxidation of various components and the crystallization of sucrose. Generally, sour candies can contain 2% citric acid.
4. Citric acid has the characteristics of chelation and pH regulation, which can enhance the antioxidant effect and inactivate enzymes, and can reliably ensure the stability of frozen food.
